Pumpkin Pie Bars

Ingredients
  • 1⅓ C. flour
  • ½ C. packed brown sugar
  • ¾ C. granulated sugar (I used Coconut sugar)
  • ¾ C. cold butter
  • 1 C. oats
  • 8 oz. cream cheese, softened
  • 3 eggs
  • 15 oz. canned pumpkin (not pumpkin pie filling)
  • 1 Tbsp. pumpkin pie spice
Directions
  1. Preheat oven to 350.
  2. Line a 9x13 pan with foil or parchment paper and grease slightly.
  3. Mix flour, brown sugar and ¼ cup regular sugar in a bowl.
  4. Cut in butter with pastry blender or two knives until mixture resembles coarse crumbs.
  5. Stir in oats; reserve 1 cup of this mixture.
  6. Press the remaining mixture into the bottom of the pan; bake for 15 minutes.
  7. Beat the cream cheese, remaining sugar, eggs, pumpkin and pumpkin pie spice in the bowl of a mixer on medium speed until well blended.
  8. Pour over the done crust and sprinkle with the reserved crumb mixture.
  9. Bake for 25 minutes; cool slightly.
  10. Lift the bars from the pan using the foil/parchment paper; cool completely.
  11. Cut into bars.
  12. Save the leftovers in a tightly covered container in the fridge.
