Lemon Blueberry Coffee Cake

Ingredients
  • 1 box lemon cake mix
  • ½ cup butter, softened
  • 2 whole eggs
  • 1 cup blueberries fresh or frozen
  • ⅔ cup milk
Directions
  1. In a large mixing bowl, combine the dry cake mix and butter. Mix until crumbly. Set aside 1¼ cups of mixture for the topping.
  2. Add eggs and milk to the remaining crumb mixture. Beat with with a mixer on medium for two minutes.
  3. Spread batter in a greased 9x9 or 9x13 pan. Top with blueberries and reserved crumb mixture.
  4. Bake at 325 degrees for 25 to 40 minutes depending on pan size. Serve.
