These aren’t really eclairs but yummy anyway.
1 small box of graham crackers
1 large box of vanilla instant pudding
12 oz Cool Whip
1 container of ready made chocolate frosting
You can make this 2 different ways: 1. Mix instant pudding as directed on box for a creamier, more pudding-like texture, or 2. just use box of pudding powder(not mixed with milk) for a thicker, more eclair type texture.
Then: Layer bottom of pan with crackers. Mix your pudding mixture with cool whip and pour over crackers. Layer more crackers over pudding mixture. Melt frosting in microwave (start with 20 seconds) and pour over graham crackers. Cover with plastic wrap or foil and refrigerate til serving.
