You guys know how I love me some peanut butter. I will even eat it alone by the spoonful. I also love dipping a Hershey’s chocolate bar into it for a quick cheat-version of these Peanut Butter Cups. I was thrilled when I was asked to review Sally McKenney’s new cookbook Sally’s Candy Addiction: Tasty Truffles, Fudges & Treats for Your Sweet-Tooth Fix. Um, yes?!
And what recipe immediately caught my attention? These Peanut Butter Cups. But it’s filled with over 75 amazing recipes like Crazy Candy Deep-Dish Cookie Cake, Vanilla Cake Pops and Chocolate Sea-Salt Caramels. I am in love with this cookbook and can’t wait to make everything in it! It has gorgeous photos for every recipe. There are also tips in the front of the book for making your candy making even easier.
My mom would make Peanut Butter Cups at Christmas time when I was growing up. Sometimes she would place homemade caramel in the center instead of peanut butter or she would make both kinds. I always preferred the peanut butter filled cups. We would keep them in the fridge and they taste so good cold. I have some in my fridge right now and think I need to grab a couple right now. - 1 cup creamy peanut butter, divided
- 1 Tbsp. butter, softened to room temperature
- ½ cup powdered sugar
- ½ tsp. salt
- 3 cups milk chocolate chips
- chocolate sprinkles, optional
- Line 2 mini muffin pans with 36 mini liners. Set aside.
- With a handheld or stand mixer, beat together ½ cup of the peanut butter, butter, powdered sugar and salt on medium speed in a medium sized bowl or the bowl of your stand mixer for 3 minutes until smooth. It may look crumbly at first but it comes together. Set aside.
- Mix together the chocolate chips and remaining ½ cup peanut butter in a heatproof bowl. Melt in the microwave on 50% power in 20 second intervals, stirring after each interval.
- Drop 1 tsp. of the chocolate mixture into each mini muffin cup. Shake pan carefully back and forth to even out.
- Next, measure out 1 tsp. of peanut butter mixture and place into muffin cups. Top all with another tsp. of chocolate mixture. Shake pans gently again to settle the chocolate. Decorate with sprinkles if desired.
- Refrigerate for 15 minutes, or until chocolate is set.
- Store in a covered container in a cool place. The fridge is ideal.

Peanut butter cups are a relatively new thing here in the UK, I’ve seen them in a few shops, but I’ve always wanted to try them, so this homemade version is great! I’ll finally get to try them!
