Oatmeal Apple Bites

Now that school is back in session, I feel the need to make great snacks that my kids will love when they walk in the door. I love hearing about their day and what better way than over cookies and milk? These Oatmeal Apple Bites are healthy, too, so I don’t feel bad letting my kids have another one. They are so good with the bits of apples baked into them. My son especially can’t get enough of these.

Ingredients
  • 2 egg whites
  • ¼ cup milk
  • 2 tablespoons oil (coconut or olive oil is what I use)
  • 1 teaspoon vanilla extract
  • 2 cups quick-cooking oats
  • ½ cup all-purpose flour
  • ¼ cup sugar
  • ¼ cup packed brown sugar
  • 1 teaspoon ground cinnamon
  • ½ teaspoon baking powder
  • ½ teaspoon salt
  • ¼ teaspoon ground nutmeg
  • 1 cup chopped peeled apple
Directions
  1. In a large bowl, beat the egg whites, milk, oil and vanilla.
  2. Combine the oats, flour, sugars, cinnamon, baking powder, salt and nutmeg; gradually add to egg white mixture and mix well.
  3. Stir in apple.
  4. Drop by tablespoonfuls 2 in. apart onto baking sheets coated with cooking spray.
  5. Bake at 350° for 10-12 minutes or until bottoms are lightly browned.
  6. Remove to wire racks.
