Peanut Butter Cornflakes

Peanut Butter Cornflakes are a wonderful no bake dessert. They are extremely addicting so beware!

Peanut Butter Cornflakes
 My neighbor made these when we went up the canyon one summer and I fell in love. Such a gooey treat! Peanut butter and gooey-ness just say, “Eat me! I’m delicious!” I always double these and they still don’t last long enough. You can drizzle melted chocolate on top if you want, but I love them just the way they are.

Ingredients
  • 1 c. sugar
  • 1 c. corn syrup
  • 1¼ c. peanut butter (creamy or chunky)
  • 4 c. corn flakes
Directions
  1. Bring sugar and corn syrup to a boil in a large saucepan and let it boil about 1 minute.
  2. Remove from heat and add peanut butter. Stir until smooth.
  3. Add the cornflakes and stir until coated.
  4. Drop onto wax paper and let set up. Break apart and store in an airtight container.

    Oh my! I would SOOO love these – I have a similar recipe in my cookbook that uses rice chex, but this is an awesome idea to use up corn flakes, and it would be just as yummy. I'm soo with you on the 'gooey' comment! I always tell folks not to make them when they're home alone or no one will get to taste them. =) I will have to try these with cornflakes very soon.     I'm from Arkansas and we call these scrumptious treats, "Peanut Butter Chewies." They were formed into mounds or balls. They would be served as dessert with our school lunches. Ahh…those were the days!
