Paula Deen’s Old Fashioned Meat Loaf

If you’re craving some down home comfort food, make Paula Deen’s Old Fashioned Meat Loaf. Bellies will be full and happy.

 “Meat Loaf, Meat Loaf, Double Double Beet Loaf. I hate Meat Loaf.” That’s according to Randy on A Christmas Story, not me. I double love me some meat loaf. Especially the next day as a meat loaf sandwich for lunch. I just take some bread and spread Miracle Whip on both sides, then place some warmed meat loaf on one side topped with Heinz 57. Completely happy. I came across Paula Deen’s version in one of her cookbooks and it’s awful good. Try the sandwich. I’m serious. Do it.

Serves: 6-8
Ingredients
  • Meat Loaf
  • 1 lb. ground beef
  • 6 oz. can Tomato Paste
  • 1 chopped onion
  • ½ c. oats
  • 1 egg
  • 1 tsp. salt
  • Topping
  • ⅓ c. ketchup
  • 2 Tbsp. brown sugar
  • 1 Tbsp. mustard
Directions
  1. Mix together all the Meat Loaf ingredients in a large bowl. Your hand or a potato masher will do the best job.
  2. Place mixture into a loaf pan.
  3. Mix together the topping ingredients and spread over the meat.
  4. Cover with foil and bake at 375 degrees for 40-60 minutes until done. Remove foil the last 15 minutes.
  5. Serve.

    Could you use Lipton onion soup mix instead of the onion and salt ?

    Made this and really did like it except for the topping, too sweet for me. Will try with brown gravy on top next time.

    So I have been on a quest to find a good meatloaf recipe and trust me, I have tried a lot! This one, by far, is the best I have come across and will be my “go to” recipe in the future. I had to improvise a little as I did not have tomato paste in the pantry (egads!) so took a 15oz can of tomato sauce and reduced it down by about 2/3 and it was spot on! It was very moist without being mushy, which is what I remember my mother’s meatloaf being (sorry Mom!). Loved all of the onion and the topping was better than I expected. I did not quite use 2tbsp. of brown sugar, but all in all, very tasty! Thanks for posting this recipe 🙂
